how do you hit down on the ball?

If you notice at the bottom of the swing, the hips lead the hands. This is lag. His hand are then allowed (with lag) to fall to the ball with a decending blow. Down and thru the shot is how you generate spin and compress the golf ball. With the exception of the driver of course.

How do I play a fairway iron? Also what is the basic address to the ball?...set up...distance from body to ball....from club to body....type of swing....or swing path.

Irons vary in length and lie. hang you "glove" hand along your side and let the club you choose lie in the finger tips of your hand (hand cupped like you are carrying a suitcase). You want to grip in the fingers.
when the club soles then grip it. then you can pull the club to your front. if griped properly, it will fall where it needs to. adjust your feet so the ball falls where the club dictates. Distance from body to ball:
1. take normal address position.
2. relax and take your bottom hand off the club.
if the hand when it comes off the club moves towards you, you are reaching for the ball, if it moves away, you are too close. Your arms should hang naturally. Good setup and grip can generally dictate proper path and swing plane to a certain extent.

With an iron shot on the fairway is the ball in the center of my stance?

It varies from player to player. i will say most "Mid Irons" are in the center. My rule of thumb is as far forward as i can get it and still maintain the proper lie angle of the club... Thus pushing my 2-4 irons slightly forward in my stance (1 to 2 balls forward).
