Finally, a thorough explanation about what purpose baking soda has in baking. It left me wondering, though, how eggs play a role in baking. Sometimes you have to whip them, sometimes fold them, and other times just use the yolk. Maybe you could do an episode on an explanation of the peculiarities of eggs.
