Recipe: Miso Butterscotch Halibut Recipe

Halibut with Miso Butterscotch

6 8oz halibut filets
3 Sprigs thyme
butter
salt

Season filets with salt.
Heat a sauté pan, add butter and let melt. Once the butter is melted and slightly browned, add thyme.
Add filets to pan and spoon butter and thyme mixture over filets. Cook until firm.

Miso butterscotch

¾ c. brown sugar
½ c. corn syrup
2 Tbs. butter
1 c. heavy cream
6 Tbs. white miso

Cook mixture of sugar, corn syrup, butter, and heavy cream until thick, allow to cool and blend in miso paste.
Drizzle miso butterscotch over cooked halibut filet.
