Recipe: Artichoke and Edamame Salad Recipe

Whiskey braBised Artichoke Hearts

4 artichokes
¼ c. bacon
¼ c. shallots
3 ¼ c. cider
1 ½ whiskey
3 Sprigs thyme
1 oz. rice wine vinegar

Clean artichokes and place in acidulated water. (1 qt. water- ½ lemon squeezed)
Brown bacon, add and cook shallots and thyme.
Deglaze the pan with the apple cider, and add the apple cider.
Add the artichokes and simmer until tender. 20-30 minutes.

 

To cut the heart from the artichoke:

  1. Expose
    the heart of the artichoke by either of the following methods:
    1. Pulling
      off each individual leaf
    2. Cutting
      off leaves (as shown in this video) by going around the artichoke with a
      sharp boning or pairing knife.
  2. Cut
    the remaining leaves off of the top of the artichoke heart.
  3. Scrape
    the “choke” (the fuzzy center of the heart) out.
  4. Cut
    the artichoke heart and stem into sections.
