Recipe: Artichoke and Edamame Salad Recipe
Whiskey braBised Artichoke Hearts
4 artichokes
¼ c. bacon
¼ c. shallots
3 ¼ c. cider
1 ½ whiskey
3 Sprigs thyme
1 oz. rice wine vinegar
Clean artichokes and place in acidulated water. (1 qt. water- ½ lemon squeezed)
Brown bacon, add and cook shallots and thyme.
Deglaze the pan with the apple cider, and add the apple cider.
Add the artichokes and simmer until tender. 20-30 minutes.
To cut the heart from the artichoke:
- Expose
the heart of the artichoke by either of the following methods:
- Pulling
off each individual leaf - Cutting
off leaves (as shown in this video) by going around the artichoke with a
sharp boning or pairing knife.
- Pulling
- Cut
the remaining leaves off of the top of the artichoke heart. - Scrape
the “choke” (the fuzzy center of the heart) out. - Cut
the artichoke heart and stem into sections.
