I'm not sure why everyone wants to cook the wine down. If you pour wine right over spaghetti it makes a great sauce in its own right without any other ingredient. But of course, the Spinach and garlic and all are great too.
That looks awesome. I'm going to have try this one. Spinach has such a rich flavor.
