Recipe: Stir Fry


Shrimp Stir Fry (Prep time – 15 minutes/Cook time – 10minutes)

(Shrimp goes for about $8.99/lb, depending on the size)

 

Depending on how many you’re feeding, plan accordingly – or,switch it up with chicken and any of your favorite veggies…either way, it’svery tasty.

 

            Shrimp– peeled and deveined (or meat of choice)

            BokChoy

            Carrots

            BeanSprouts

            Onion

            Garlic

            SnowPeas

            Ginger

            RedChili Peppers

            SesameSeeds

            SoySauce (Recommend Light and Low-Salt)

            PeanutOil

            ChineseCooking Wine

            CornStarch - 1 TBP. With Water

            Sugar– 1 tsp.

 

The biggest key to successful Chinese cooking is the ORDERin which you stirfry your veggies. You are going to want to cook your harderveggies first (carrots, celery, onion, etc.) and end with the veggies that aremore naturally water based, like the leafy Bok Choy and Bean Sprouts.

 

If you don’t hear the food “sizzling”, you are adding theveggies in too quickly, which is cooling the oil – not good. Also, make sureyour veggies are dried before cooking them in the oil, as you may know – Waterand Oil don’t mix!!

 

-       Ina bowl, prepare the sauce consisting of Soy, Wine and Sesame Seeds

-       Inanother bowl, mix corn starch and water – this will be added last to thickenthe sauce

-       Inyet another bowl, soak your chili peppers in Soy and sugar for spice (removeseeds if less spiciness is desired)

-       HeatPeanut or Canola oil in wok until it begins to smoke slightly

-       Onceheated, toss in your garlic, ginger and onion to sweat them

-       After1 – 2 minutes of sweating, toss in the carrots

-       In2 more minutes add snow peas

-       AddShrimp to Wok and cook until orange throughout – about 3 – 4 minutes dependingon size of shrimp

-       Tossin Soy/Wine/Sesame mixture to add seasoning

o      Tip– You can add some orange juice to this too for more flavor!

-       Addin chili pepper/soy mixture for heat and balance of flavor

-       Finallyadd in corn starch thickener and simmer 1 minute with all flavors combining

-       Lastly,throw in chopped bok choy and bean sprouts

-       Serveover bed of brown rice with some tasty Asian Pears and Oranges with honey!

 

Enjoy this dish, however, it will take you a couple times to“perfect” it, so be patient and remember, cooking with all these ingredients istime-sensitive…so just make sure not to make it too soupy or over cook thoseveggies, in other words…act quick when you start to see your vegetables startto glisten, it’s time to add the next phase.
