Recipe: Omelets
Breakfast Omelets with Hash Browns – Prep time – 5 – 10minutes/Cook time – 10 minutes
(Breakfast is so cheap to make…a dozen eggs is around $1,any questions?!?)
This could be the episode that saves the most money foreveryone…I mean, even if you have 6 people to feed, a dozen eggs takes care ofthat for you fooooor, around a buck! Compared to eating out, where the minimumyou’ll pay for the simplest of breakfasts is $5/plate, BEFORE TAX ANDTIP…you’ll have a hard time justifying eating B-fast again “out on the town”.
Eggs
Milk
Spinach
Garlic
Feta
RedOnion
RedPepper
GreenPepper
Cheddar
WhiteOnion
Mushrooms(optional)
Butter(unsalted)
Saltand Pepper
Parsley
Potatoes
- Meltbutter in skillet to coat bottom of pan
- Inbowl, mix 2 eggs (or whites, or Egg Beaters) with 1 Tbl. of Milk
- Dicered onion and garlic and toss into heated pan to sweat them
- Tossin the whole leaf spinach – the spinach will wilt in about 1 minute
- Oncespinach is wilted, pour eggs evenly throughout the pan over the vegetables
- Afterabout a minute, crumble some feta over the omelet
o Bynow the eggs should look a little “creamy” on top, take a peak underneath bylifting up a bit and seeing how done it is
- Oncethe bottom is cooked, you can either fold the omelet in half, thirds or justflip it entirely to keep it round…it’s up to you on the presentation of thedish
- Forthe Cheddar omelet, dice the peppers and onion and add into pan to sweat themas well…then, just follow the directions above
Shredded Hash browns
Thisis almost too simple to make, but it comes out crispy and delicious…and, ofcourse it goes great with any type of egg, so feel free to master your ownversion of hashed brown!
- Ongrater, grate several potatoes…usually about one potato per guest is the average
- Heatskillet and melt a bit of salt-free butter to prevent scorching in pan
o Atthis point you can add anything to make some flare on your potato: green onion,shallot, garlic, etc.
- Tossin grated potatoes and cook for about 3 minutes each side under medium heat, oruntil crispy
- Addsalt and pepper to taste…plate it up and pour the coffee!
